
In July I visited the CICATA Legaria Insitute of the Instituto Politecnico Nacional as a PhD examiner for former group member Dr. Erich von Borries Medrano. I was also the first overseas keynote speaker at the Institute biannual research conference. Erich's research focused on starch structure and digestibility in Mexican coloured maize varieties following nixamalization using extrusion apparatus




And I got to enjoy the products of the blue pigmented maize...
